It’s that time of the year again, Christmas! I hope you’re having a wonderful Christmas Eve, with lot’s of love and food ;) Speaking of food, eating healthy is one of the most popular New Year’s resolutions each year, so why not start a little during Christmas! Healthy food doesn’t have to be fat free, or sugar free, or really nasty.. The cake I made this noon is the proof! It contains a natural amount of sugars and fat (from the fruit), and tastes really good! Here you have the ingredients to try it for yourself (it’s for little over 6 cakes):
– 1 banana
– 1 apple
– 2 eggs
– a handful of raisins
– 3 big dates
– 75 gr (gluten free) baking mix
– cinnamon powder
– lemon juice

Ingredients to make a healthy delicious glutenfree added sugar free added fat free cake

Cut the apple in small pieces and sprinkle with lemon juice. Put the apple pieces in a bowl with small pieces of dates and the raisins, and put this mixture aside. Then mix the 2 eggs for about 3 minutes until they become foamy. Once they’re foamy, cut a banana into small pieces.

Add the banana pieces to the egg mixture and mix for another 2 minutes. When the banana is mixed well, fold the apple, dates and raisins gently through the banana-egg mixture. Once the pieces of fruit are equally spread, fold the baking mix (bit by bit) through the mixture. Finally add some cinnamon to your own taste.

Put the cakes in a preheated oven of 180°C, and leave them for about 40 minutes. Make sure to check after ~25 minutes.
